Four-tier brewing matrix
From freeze-dried solubles to a dual-boiler PID. The physics changes; the bean does not owe you a better cup until the water, grind, and time agree.
Tier 1
Zero equipment
Convenience extraction. Solubles already made; you add water.
Freeze-dried instant
$soluble · 0.5–1 min · Skill 1/4
Brewed coffee is frozen then sublimated. Aroma survival is better than spray-dried, but Maillard volatiles still collapse. Specialty freeze-dried lots exist; most supermarket jars are robusta-forward dark roasts.
No extraction — reconstitution of a dried solubles cake. TDS is whatever you stir.
Drip bag / 挂耳

A single-serve paper bed hung on the cup. Genuine percolation, so grind and roast in the bag matter. The best supermarket on-ramp to origin coffee.
Short percolation, often under-extracted. Pour slower, bloom first.
Coffee tea-bag

Immersion in a pouch. Lower agitation than a drip bag; closer to a tiny French press.
Diffusion-limited. Steep longer than the box says for dark bags.
Cold brew extract

Concentrate from long cold immersion, then diluted. Low acidity perception (acids are present, not as volatile), heavy body, chocolate. Not the same as Japanese iced flash-chill.
Most extraction already happened at ~4–20 °C over 8–16 h. You are diluting.
Tier 2
Single-touch automation
A machine owns grind, dose, and water. You own the button.
Capsule (Nespresso / Dolce Gusto)

A 9-bar-class pump through a sealed, pre-ground puck. Consistency is the product. Third-party specialty capsules exist; crema is often robusta-assisted.
Short, high-pressure percolation. Grind is locked; your only lever is capsule choice and cup volume.
Super-automatic bean-to-cup

Internal burrs, doser, and brew group. De'Longhi / Jura class. Fresh grind is a real upgrade from capsules if you feed it decent beans.
You can usually nudge grind and strength; you cannot see channeling.
Batch drip (Moccamaster / Philips)

SCA-certified machines hold 92–96 °C at the bed. Moccamaster is the reference home batch brewer. Grind still matters more than the logo.
Shower-head percolation. Flat bed, even wetting, correct basket-to-dose match.
Tier 3
Manual craft
You own grind, ratio, and pour. The specialty on-ramp.
Hario V60

60° cone, large single hole, spiral ribs. Fast, agitation-sensitive, high-clarity. The default third-wave pour-over.
Percolation with a gravity-driven pulse. Pour height and Kruve fines control the drawdown.
Kalita Wave

Flat bed, three holes, wave filter. More forgiving than V60. Even saturation is the design.
Restricted outflow. Harder to stall, harder to make a dramatically fast cup.
Origami

Twenty ribs; takes both cone and wave filters. Flow is a recipe choice, not a prison.
Geometry is a flow multiplier. Paper choice is half the method.
Chemex

Bonded thick paper, hourglass. The cleanest cup in the matrix — lipids and fines are filtered hard.
Heavy paper slows flow and strips body. Grind coarser than V60 or you stall.
AeroPress

Immersion then air-pressure finish. Inverted or standard. Championship recipes live here because the lever set is huge: grind, inversion, filter, plunge rate.
~0.5–1.5 bar on plunge. Paper or metal filter decides body. Bypass (dilute after) is a strength lever.
French Press

Full immersion, metal mesh. Lipids and fines in the cup. Hoffmann's 4+5 minute method cleans it up.
Equilibrium extraction. Time and grind, not pour. Skim crust, don't crush the fines through the mesh.
Siphon / vacuum pot

Vapor pressure raises water; vacuum pulls it back through cloth or paper. Theatre plus a uniquely juicy, clean cup.
Immersion at a rolling ~90–92 °C, then vacuum filtration. Cloth adds body vs paper.
Moka pot (Bialetti)

Stovetop ~2–3 bar percolation. Not espresso. Hoffmann: start with hot water in the boiler, medium heat, pull off at the yellow-blonde stream.
Steam-driven percolation. Overheating pyrolyzes the last third of the shot into bitterness.
Tier 4
Precision espresso
Pressure, temperature PID, and burr geometry. Commercial physics at home.
Dual boiler PID (La Marzocco / Rocket / Lelit)

Independent brew and steam boilers, PID to ±1 °C, ~9 bar with a pump. The commercial-home standard. Channeling is now your problem, not the machine's.
Darcy's law through a packed bed. 18 g in / 36 g out / 28–32 s is a starting coordinate, not a law.
Manual lever (Flair 58 / Cafelat Robot)

You are the pump. Preinfusion and declining pressure profiles are free. The most intimate espresso teacher.
Hand pressure 6–10 bar. A puck screen and a decent tamp matter more than the logo.
Precision burr grinder

Flat burrs: unimodal, tea-like clarity (SSP HU, many 64–98 mm). Conical: bimodal, more body (38 mm classics). The grinder is the largest flavor lever in the house.
Fines extract fast and clog; boulders extract slow and sour. Particle-size distribution, not the average, is the variable.
